MAPLE PECAN SQUASH

This winter squash side dish isn’t over-the-top sweet — but it is full of maple and pecan flavour. It’s a great addition to your Christmas or Thanksgiving dinner.

Yield: Serves 6.

MAPLE PECAN SQUASH

Ingredients

  • 6 cups shredded winter squash
  • 1/3 cup maple syrup
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup whole wheat bread crumbs
  • 2 tbsp chopped pecans

Directions

  1. Preheat oven to 350°F.
  2. Combine squash, syrup, salt and pepper. Spoon into a greased 8 inch square baking dish.
  3. Sprinkle with bread crumbs and pecans.
  4. Bake at 350°F for 60 minutes.
