MAPLE SCONES
Ingredients
- 3 cups all-purpose flour
- 1/4 cup packed brown sugar
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup salted butter, chilled and cubed
- 1/2 cup whipping cream
- 1/2 cup maple syrup
- 1/4 tsp maple extract
- Spicy Maple Butter*
Directions
- Preheat oven to 375°F.
- Combine flour, brown sugar, baking powder, soda and salt in a bowl. Cut in butter with a pastry blender until mixture resembles a coarse meal.
- Stir together cream, syrup and maple extract. Add cream mixture to flour mixture, stirring just until combined.
- Turn dough out onto a lightly floured surface. Knead dough 5 times. Dough will be slightly sticky. Using floured hands, pat into an 8 inch round. Cut dough into 8 wedges. Place wedges 2 inches apart on an ungreased cookie sheet.
- Bake until light golden, about 20 - 25 minutes. Cool on racks. May be stored into a cool dry place for up to 24 hours or frozen for up to 1 month. Serve with Spicy Maple Butter.

Tip:
If a pastry cutter is unavailable, butter may be rubbed in with cold fingers until mixture resembles coarse meal.
SPICY MAPLE BUTTER
Ingredients
- 1/2 cup salted butter, softened
- 2 tbsp maple syrup
- 1/4 tsp hot pepper sauce
Directions
- Combine all ingredients in a small bowl until smooth.
