MEDITERRANEAN PASTA SALAD

Celebrate the flavours of the Mediterranean with this hearty pasta salad. It’s studded with artichoke hearts, olives, dried tomatoes and other goodies.

Yield: Serves 8 - 10.

MEDITERRANEAN PASTA SALAD

Ingredients

  • 1/2 cup mayonnaise
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup oil
  • 1/4 cup white wine vinegar
  • 2 tsp Dijon mustard
  • 1 tsp sugar
  • 3/4 tsp salt
  • 1/2 tsp freshly ground pepper
  • 1/4 tsp basil, crumbled
  • 1/4 tsp oregano, crumbled
  • 1/4 tsp thyme, crumbled
  • 1 clove garlic, crushed
  • 1 pkg (450 g) farfalle pasta, cooked, rinsed and drained
  • 2 cups sliced celery
  • 1 cup kalamata olives, pitted
  • 1 can (14 oz/398 mL) artichoke hearts, drained and quartered
  • 3/4 cup sliced green onions
  • 1/2 cup julienned drained oil-packed dried tomatoes

Directions

  1. To prepare dressing, combine first 12 ingredients (mayonnaise through garlic). Dressing may be prepared and refrigerated for up to 24 hours. Combine farfalle, celery, olives, artichokes, onions and tomatoes in a bowl. Farfalle mixture may be prepared and refrigerated for up to 24 hours. Just before serving, add dressing to farfalle mixture and stir to combine.
