MEDITERRANEAN TOMATO SALAD
Ingredients
- 1/3 cup white wine vinegar
- 1 tbsp Dijon mustard
- 1 tsp oregano, crumbled
- 1 tsp grated fresh ginger
- 1/4 tsp salt
- 1 clove garlic, crushed
- 2/3 cup extra-virgin olive oil
- 6 medium tomatoes, sliced
- 1/3 cup chopped pitted kalamata olives
- 1/3 cup shredded feta cheese
Directions
- To prepare dressing, whisk together vinegar, mustard, oregano, ginger, salt and garlic until combined. Gradually whisk in oil until blended.
- Arrange tomatoes, overlapping slightly, on a platter. Sprinkle with olives and cheese. Drizzle with some of the dressing. Serve immediately.
