MEDITERRANEAN TOMATO SALAD

Tomatoes are a staple of Mediterranean cuisine and they really shine in this Greek-style salad. Serve it as a first course or a side dish to go with grilled meat.

MEDITERRANEAN TOMATO SALAD

Ingredients

  • 1/3 cup white wine vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp oregano, crumbled
  • 1 tsp grated fresh ginger
  • 1/4 tsp salt
  • 1 clove garlic, crushed
  • 2/3 cup extra-virgin olive oil
  • 6 medium tomatoes, sliced
  • 1/3 cup chopped pitted kalamata olives
  • 1/3 cup shredded feta cheese

Directions

  1. To prepare dressing, whisk together vinegar, mustard, oregano, ginger, salt and garlic until combined. Gradually whisk in oil until blended.
  2. Arrange tomatoes, overlapping slightly, on a platter. Sprinkle with olives and cheese. Drizzle with some of the dressing. Serve immediately.
