MEDITERRANEAN TOMATO SALAD
Ingredients
1/3 cup white wine vinegar
1 tbsp Dijon mustard
1 tsp oregano, crumbled
1 tsp grated fresh ginger
1/4 tsp salt
1 clove garlic, crushed
2/3 cup extra-virgin olive oil
6 medium tomatoes, sliced
1/3 cup chopped pitted kalamata olives
1/3 cup shredded feta cheese
Directions
To prepare dressing, whisk together vinegar, mustard, oregano, ginger, salt and garlic until combined. Gradually whisk in oil until blended.
Arrange tomatoes, overlapping slightly, on a platter. Sprinkle with olives and cheese. Drizzle with some of the dressing. Serve immediately.
