MEDITERRANEAN WRAPS
Get all the flavour of a Greek salad in a wrap sandwich. These rolled tortillas are filled with cucumber, tomato and our tangy Feta Filling.

MEDITERRANEAN WRAPS
Ingredients
- Feta Filling (recipe below)
- 6 flour tortillas (10 inch/25 cm)
- 12 lettuce leaves
- 1 cup thinly sliced English cucumber
- 1 cup thinly sliced red bell pepper
- 1 cup thinly sliced tomato
- 1/2 cup thinly sliced red onion
Directions
- Spread Feta Filling evenly over one side of each tortilla, leaving a 2 inch border.
- Top each with lettuce, cucumber, red pepper, tomato and onion, dividing equally.
- Roll up tortillas to enclose filling. Serve immediately or wrap individually and refrigerate for up to 4 hours.

FETA FILLING
Ingredients
- 1 cup crumbled feta cheese
- 1/2 cup plain yogurt
- 1/4 cup chopped pickled pepperoncini peppers
- 1/4 cup chopped pitted kalamata olives
- 2 tbsp chopped fresh parsley
- 1 tsp fresh lemon juice
- 1 tsp paprika
- 1/4 tsp oregano, crumbled
- 1/8 tsp freshly ground pepper
Yield: Makes about 1 1/4 cups.
Directions
- Place all ingredients in a food processor. Process just until combined; do not overprocess. May be refrigerated for up to 24 hours.
