MELON IN SPICED SYRUP

Give your cantaloupe and honeydew a lift by serving it in a spiced syrup made of ginger, cloves, cinnamon and rum. This mixture is great on its own as a light dessert or served over waffles or ice cream.

Yield: Serves 8.

MELON IN SPICED SYRUP

Ingredients

  • 2 cups water
  • 1 cup granulated sugar
  • 1 piece (1 inch) fresh ginger, peeled and thinly sliced*
  • 1 tsp black peppercorns*
  • 3 whole cloves*
  • 1 cinnamon stick*
  • 1 tbsp rum
  • 4 cups cantaloupe balls or cubes
  • 4 cups honeydew melon balls or cubes

Directions

  1. To prepare syrup, combine water, sugar, ginger, peppercorns, cloves and cinnamon stick in a medium saucepan. Bring to a boil; reduce heat and simmer until mixture is reduced to 1 cup, about 20 - 25 minutes.
  2. Cool; strain mixture into a small bowl. Discard solids. Stir rum into syrup.
  3. Cover and refrigerate for at least 2 hours or up to 24 hours.
  4. Combine cantaloupe, honeydew and syrup in a serving bowl.
