MELON IN SPICED SYRUP
Give your cantaloupe and honeydew a lift by serving it in a spiced syrup made of ginger, cloves, cinnamon and rum. This mixture is great on its own as a light dessert or served over waffles or ice cream.

MELON IN SPICED SYRUP
Ingredients
- 2 cups water
- 1 cup granulated sugar
- 1 piece (1 inch) fresh ginger, peeled and thinly sliced*
- 1 tsp black peppercorns*
- 3 whole cloves*
- 1 cinnamon stick*
- 1 tbsp rum
- 4 cups cantaloupe balls or cubes
- 4 cups honeydew melon balls or cubes
Directions
- To prepare syrup, combine water, sugar, ginger, peppercorns, cloves and cinnamon stick in a medium saucepan. Bring to a boil; reduce heat and simmer until mixture is reduced to 1 cup, about 20 - 25 minutes.
- Cool; strain mixture into a small bowl. Discard solids. Stir rum into syrup.
- Cover and refrigerate for at least 2 hours or up to 24 hours.
- Combine cantaloupe, honeydew and syrup in a serving bowl.
