MICROWAVE BLUEBERRY JAM
There is no easier way to make jam than by zapping it for a few minutes in the microwave. This is a brilliant way to use up any leftover fresh blueberries that you may have, though frozen blueberries work just as well.

MICROWAVE BLUEBERRY JAM
Ingredients
- 3 cups fresh or frozen blueberries, thawed
- 1 1/2 cups granulated sugar
- 1/4 cup fresh lemon juice
- 1/2 tsp grated lemon peel
- 1/2 tsp salted butter
Directions
- Place blueberries in a large microwave-safe bowl and lightly crush using a potato masher.
- Stir in sugar, lemon juice, lemon peel and butter.
- Microwave on high for 15 - 20 minutes, stirring every 2 minutes, until mixture is thick and translucent; cool.
- Spoon jam into a sterilized container. Cover and refrigerate for up to 2 weeks.
