MINTED COUSCOUS SALAD
This hardy couscous salad is full of Mediterranean-style ingredients like feta cheese, kalamata olives and fresh mint. Serve it alongside a Greek-inspired meal.

MINTED COUSCOUS SALAD
Ingredients
- 1 1/2 cups water
- 1/2 tsp salt
- 3/4 cup couscous
- 3 tbsp extra-virgin olive oil
- 1 tbsp white wine vinegar
- 1 red bell pepper, diced
- 1/2 cup slivered fresh mint
- 1/2 cup shredded feta cheese
- 1/3 cup kalamata olives, pitted and halved
- 1/2 tsp freshly ground pepper
Directions
- In a medium saucepan, bring water and salt to a boil over medium heat; stir in couscous. Remove from heat, cover and let stand 5 minutes.
- Transfer couscous to a bowl and fluff with a fork.
- Stir in oil and vinegar; cool to room temperature.
- Stir in red pepper, mint, feta cheese, olives and pepper. Serve immediately or cover and refrigerate for up to 4 hours.
