These monster-sized cookies are a real treat! A great way to use up leftover Halloween candy or baking chips from your pantry.

Monster Oatmeal Chip Cookies
Ingredients
4 cups all-purpose flour
3 1/2 cups old-fashioned rolled oats
1 tbsp baking soda
1 tsp salt
2 tsp ground ginger
2 tbsp cinnamon
2 cups salted butter, softened
2 cups packed brown sugar
4 large eggs
2 tsp vanilla
1 cup chocolate chips
2 cups assorted bite-sized candy pieces, dried fruit pieces or more baking chips
Directions
Preheat oven to 350°F.
Combine flour, oats, baking soda, salt, ginger and cinnamon. Set aside.
In a large bowl, use medium speed of an electric mixer and beat together butter and sugar until fluffy. Beat in eggs one at a time, until blended. Beat in vanilla.
Stir in flour mixture just until blended. Stir in chocolate chips and bite-sized candy pieces.
Drop 1/4 cup measures of dough 3 inches apart on parchment paper-lined cookie sheets.
Using a cup dipped in flour, flatten dough into large circles about 1/4 inch thick.
Bake for 12 – 15 minutes, or until light golden brown around edges.
Let cookies stand for 5 minutes on cookie sheets. Remove from cookie sheets and cool cookies on racks.
Store in an airtight container for up to 4 days. May be frozen.

Tip:We used a combination of M&M’s, Reese’s Pieces and chocolate chips to make these cookies. If only using baking chips, try a variety – white, milk or dark chocolate, butterscotch, sea salt caramel or peanut butter.
