Monte Cristo Sandwiches
Ingredients
- 2 large eggs
- 1/2 cup milk (2%)
- 1/4 tsp cayenne pepper
- 1/4 tsp salt
- 1/8 tsp freshly ground pepper
- 2 tbsp Dijon mustard
- 8 slices whole grain bread
- 4 thin slices deli ham
- 4 thin slices deli turkey breast
- 8 slices Swiss cheese
- 2 tbsp canola oil
Directions
- Whisk eggs in a large shallow bowl or pie plate. Whisk in milk, cayenne pepper, salt and pepper until blended; set aside.
- Spread mustard on one side of 4 bread slices. Top with ham, turkey and cheese, dividing equally. Cover with remaining bread slices.
- Heat 1 tbsp oil in a large nonstick frypan over medium heat.
- Working with one sandwich at a time, dip sandwiches into egg mixture, turning to coat both sides. Cook sandwiches in batches, adding remaining oil as necessary, until golden brown and cheese is melted, about 2 – 3 minutes per side.
