MOROCCAN ZUCCHINI SAUTE

This easy zucchini side dish is flavoured with garlic and cumin.

Yield: Serves 6 - 8.

MOROCCAN ZUCCHINI SAUTE

Ingredients

  • 1 tbsp olive oil
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, finely chopped
  • 1/2 tsp ground cumin
  • 1/4 tsp salt
  • 1/8 tsp cayenne pepper
  • 4 cups sliced zucchini (1/2 inch)
  • 1 1/4 cups diced Roma tomatoes
  • 2 tbsp fresh lemon juice

Directions

  1. Heat oil in a large frypan over medium heat. Add onion and garlic; saute until softened, about 5 minutes.
  2. Add cumin, salt and cayenne pepper; cook, stirring, for 1 minute. Add zucchini and saute until tender crisp, about 5 minutes. Add tomatoes and saute for 3 - 4 minutes or until tomatoes are softened.
  3. Stir in lemon juice and cook for 1 minute. Serve immediately.
