MUSHROOMS IN A PACKET

Foil packet cooking opens up your options on the barbecue. This recipe involves wrapping mushrooms, garlic butter and parsley in a foil packet and then grilling the whole thing alongside your steaks or other entrées.

MUSHROOMS IN A PACKET

Ingredients

  • 2 tbsp butter, melted
  • 1/2 tsp thyme, crumbled
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • 2 cloves garlic, thinly sliced
  • 4 cups whole mushrooms
  • 1/4 cup sliced green onion
  • 2 tbsp chopped fresh parsley

Directions

  1. Preheat natural gas barbecue on medium heat for 10 - 15 minutes.
  2. Combine melted butter, thyme, salt, pepper and garlic. Place mushrooms in centre of a large piece of heavy-duty foil. Pour melted butter mixture over mushrooms. Sprinkle with green onion and parsley. Bring edges of foil together to form a packet; close all edges with tight double folds.
  3. Cook over medium heat on natural gas barbecue, turning packet over frequently, for 15 - 20 minutes or until mushrooms are tender.
