MUSTARD ROASTED POTATOES
These crispy roasted potatoes get a flavour boost from a combination of Dijon mustard, lemon juice, rosemary and garlic.

MUSTARD ROASTED POTATOES
Ingredients
- 1/3 cup Dijon mustard
- 1/4 cup extra-virgin olive oil
- 2 tbsp dry white wine or fresh lemon juice
- 1 tsp rosemary, crumbled
- 1/2 tsp freshly ground pepper
- 1/4 tsp salt
- 2 cloves garlic, finely chopped
- 7 cups cubed red potatoes
Directions
- Preheat oven to 400°F.
- In a bowl, whisk together all ingredients except potatoes.
- Add potatoes and toss to coat with mustard mixture.
- Place potatoes in a single layer in a parchment paper or nonstick foil-lined jelly-roll pan.
- Bake, stirring occasionally, for 50 - 60 minutes or until potatoes are tender and browned.
