MUSTARD RUBBED RIB EYE

We like using a rib eye with this recipe because it’s such a tender and flavourful cut, but this spicy mustard rub is great on any cut of steak.

Yield: Serves 4.

MUSTARD RUBBED RIB EYE

Ingredients

  • ​2 tbsp whole grain mustard
  • 2 tbsp packed golden brown sugar
  • 2 tsp chili powder
  • 2 cloves garlic, finely chopped
  • 1/2 tsp celery seed
  • 1/2 tsp oregano, crumbled
  • 1/2 tsp freshly ground pepper
  • 4 rib-eye steaks, 1 inch thick
  • Salt*

Directions

  1. To prepare rub, combine mustard, brown sugar, chili powder, garlic, celery seed, oregano and pepper. Spread rub over both sides of steaks.
  2. Place steaks in a large heavy zip-lock plastic bag. Seal bag and place on a tray. Refrigerate for at least 2 hours or up to 24 hours.
  3. Preheat natural gas barbecue on medium heat for 10 - 15 minutes. Meanwhile, remove steaks from bag. Sprinkle with salt.
  4. Grill steaks over medium heat on natural gas barbecue to desired doneness.
