OATMEAL RAISIN COOKIES
Oatmeal and raisins are a classic combination. These cookies make a nice addition to any cookie jar.
Yield: Makes about 4 1/2 dozen.

OATMEAL RAISIN COOKIES
Ingredients
- 1 cup flour
- 1/2 cup whole wheat flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1 cup butter, softened
- 1 cup packed dark brown sugar
- 1/2 cup sugar
- 2 tbsp fancy molasses
- 2 eggs
- 3 cups old-fashioned rolled oats
- 1 1/2 cups raisins
Directions
- Preheat oven to 350°F. Combine first 6 ingredients (flour through salt) in a bowl; set aside.
- Using medium speed of an electric mixer, beat together butter, brown sugar, sugar and molasses until fluffy. Beat in eggs, one at a time, beating well after each addition. Gradually beat in flour mixture just until combined. Stir in oats and raisins.
- Drop 1 tbsp measures of dough 2 inches apart on parchment paper-lined cookie sheets. Bake for 15 – 17 minutes or just until cookies are golden. Let cookies stand for 5 minutes on cookie sheets. Remove from cookie sheets and cool cookies on racks. Store in an airtight container in a cool dry place for up to 1 week. May be frozen.
