OATMEAL AND WHITE CHOCOLATE CHIP COOKIES
White chocolate chips give these traditional oatmeal cookies a new twist.
Yield: Makes about 5 dozen cookies.

OATMEAL AND WHITE CHOCOLATE CHIP COOKIES
Ingredients
- 2 cups flour
- 1 1/2 cups old-fashioned rolled oats
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 cup butter, softened
- 1 cup sugar
- 1 cup packed golden brown sugar
- 2 eggs
- 2 tsp vanilla
- 2 cups white chocolate chips
- 1 cup chopped pecans or walnuts
Directions
- Combine flour, oats, baking powder, baking soda and salt in a bowl; set aside.
- Using medium speed of an electric mixer, beat together butter, sugar and brown sugar until fluffy. Beat in eggs, one at a time, until blended. Beat in vanilla.
- Stir in flour mixture just until blended. Stir in white chocolate chips and pecans.
- Drop 1 tbsp measures of dough 2 inches apart onto greased cookie sheets.
- Bake at 350°F for 12 - 14 minutes or until light golden brown around edges
- Let cookies stand for 1 minute on cookie sheets. Remove from cookie sheets and cool cookies on racks.
- Store in an airtight container for up to 4 days. May be frozen.
