This buttery loaf cake is made with candied cherries. Keep a loaf on hand during the holiday season for when guests drop by for coffee.

OLD FASHIONED CHERRY POUND CAKE
Ingredients
- 1 cup salted butter, softened
- 3/4 cup berry sugar
- 3 large eggs, well beaten
- 3 cups flour, divided
- 1 1/2 cups candied cherries, halved
- 1/2 tsp salt
- 2 tsp baking powder
- 1/2 cup milk (2%)
Directions
- Cream butter and sugar thoroughly.
- Add eggs and mix well. Sprinkle 1/4 cup flour over cherries; add salt and baking powder to remaining flour.
- Add flour mixture to butter mixture alternately with milk. Fold in floured cherries.
- Bake in a greased loaf pan at 350°F until a cake tester inserted into the centre comes out clean, about 65 minutes.
- Cool thoroughly before wrapping. Store at room temperature for 2 weeks or freeze for up to 3 months.
