ORZO AND SHRIMP SALAD WITH AVOCADO DRESSING

This elegant salad combines tender shrimp and orzo, a short-cut rice-like pasta. The creamy dressing is made with avocado, which lends a pretty green colour.

Yield: Serves 4 - 6.

ORZO AND SHRIMP SALAD WITH AVOCADO DRESSING

Ingredients

  • 1 ripe avocado, halved, pitted, peeled and cubed
  • 1/2 cup plain yogurt
  • 2 tbsp fresh lime juice
  • 2 tbsp sliced green onion
  • 1 tbsp chopped fresh cilantro
  • 1/2 tsp green pepper sauce
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp ground coriander
  • 1/4 tsp ground cumin
  • 1/8 tsp freshly ground pepper
  • 1 lb frozen cooked small shrimp, thawed, rinsed and patted dry
  • 3/4 cup orzo, cooked, rinsed and drained
  • 1/2 cup diced celery
  • 1/2 cup julienned carrot
  • 1/2 cup fresh cilantro leaves
  • Lettuce leaves

Directions

  1. To prepare dressing, place first 11 ingredients (avocado through pepper) in a food processor; process until smooth.
  2. Combine shrimp, cooked orzo, celery, carrot and cilantro leaves in a bowl. Add dressing and toss to coat. Place lettuce leaves on individual serving plates. Spoon shrimp mixture on top. Serve immediately.
