PEACH SALSA
Sweet and spicy, this chopped salsa is a mix of fresh peaches, cucumber and serrano chiles. Use it with our Pork Lettuce Wraps with Peach Salsa or serve it with grilled fish or chicken.
Yield: Makes 1 1/2 cup.

PEACH SALSA
Ingredients
- 1 cup diced peeled peaches
- 1/4 cup diced red bell pepper
- 1/4 cup diced seeded English cucumber
- 1/4 cup thinly sliced green onion
- 1 tbsp fresh lime juice
- 1 tbsp packed golden brown sugar
- 2 tsp finely chopped seeded serrano chiles
- 1/2 tsp sesame oil
- 1/2 tsp soy sauce
Directions
- Combine all ingredients in a bowl. May be refrigerated for up to 2 hours.
Nutritional analysis per 2 tbsp:
14 calories, 0.2 g fat, 0.2 g protein, 3.1 g carbohydrate, 0.4 g fibre, 13 mg sodium
Tip: Hot peppers cause severe skin and eye irritation. Wear disposable gloves when handling hot peppers and avoid touching any exposed skin.
