Yield: Serves 4.
Ingredients: 1 cup finely chopped onion; 3 cloves garlic, finely chopped; 1/2 tsp salt; 1/4 tsp freshly ground pepper; 1/4 tsp red pepper flakes; 2 tbsp olive oil; 2/3 cup vodka; 1 can (14 oz) crushed tomatoes; 1 cup whipping cream; 16 oz penne pasta, cooked and drained; 2 tbsp chopped fresh parsley; Freshly grated Parmesan cheese

This pasta is easy enough to whip up on a weeknight, but impressive enough to serve to guests. There is indeed vodka in the sauce, along with tomatoes, whipping cream and Parmesan cheese.

Yield: Serves 4.

PENNE ALLA VODKA

Ingredients

1 cup finely chopped onion
3 cloves garlic, finely chopped
1/2 tsp salt
1/4 tsp freshly ground pepper
1/4 tsp red pepper flakes
2 tbsp olive oil
2/3 cup vodka
1 can (14 oz) crushed tomatoes
1 cup whipping cream
16 oz penne pasta, cooked and drained
2 tbsp chopped fresh parsley
Freshly grated Parmesan cheese

Directions

To prepare sauce, sauté onion, garlic, salt, pepper and red pepper flakes in oil for 5 minutes.
Stir in vodka and simmer 2 minutes. Add tomatoes and cream. Simmer gently over low heat for 5 minutes.
Place hot cooked pasta in a bowl and toss with sauce.
Sprinkle with parsley. Serve with Parmesan cheese. Serve immediately.
