PENNE ALLA VODKA
This pasta is easy enough to whip up on a weeknight, but impressive enough to serve to guests. There is indeed vodka in the sauce, along with tomatoes, whipping cream and Parmesan cheese.

PENNE ALLA VODKA
Ingredients
- 1 cup finely chopped onion
- 3 cloves garlic, finely chopped
- 1/2 tsp salt
- 1/4 tsp freshly ground pepper
- 1/4 tsp red pepper flakes
- 2 tbsp olive oil
- 2/3 cup vodka
- 1 can (14 oz) crushed tomatoes
- 1 cup whipping cream
- 16 oz penne pasta, cooked and drained
- 2 tbsp chopped fresh parsley
- Freshly grated Parmesan cheese
Directions
- To prepare sauce, sauté onion, garlic, salt, pepper and red pepper flakes in oil for 5 minutes.
- Stir in vodka and simmer 2 minutes. Add tomatoes and cream. Simmer gently over low heat for 5 minutes.
- Place hot cooked pasta in a bowl and toss with sauce.
- Sprinkle with parsley. Serve with Parmesan cheese. Serve immediately.
