PEPPERED CRANBERRY SAUCE

Try something different this Thanksgiving or Christmas with this peppery version of traditional cranberry sauce.

Yield: Makes 2 cups.

PEPPERED CRANBERRY SAUCE

Ingredients

  • 1 tbsp butter
  • 1/2 cup finely chopped onion
  • 3 cups fresh or frozen cranberries
  • 3/4 cup sugar
  • 1/2 cup water
  • 2 tbsp white wine vinegar
  • 1 tsp coarsely ground pepper
  • 1/4 tsp salt

Directions

  1. Melt butter in a medium nonreactive saucepan over medium heat. Add onion and sauté until softened and light golden, about 5 – 7 minutes. Stir in remaining ingredients (cranberries through salt). Bring to a boil. Reduce heat and simmer, uncovered, stirring occasionally, for 15 – 20 minutes or until cranberries pop and mixture thickens; cool to room temperature.
  2. Transfer to a serving dish. May be refrigerated for up to 4 days.
