PINA COLADA POPSICLES

These creamy ice pops have all the pineapple and coconut flavour of a classic pina colada cocktail. Add a little bit of vodka or rum for a grown-up treat.

Yield: Makes 6 popsicles.

PINA COLADA POPSICLES

Ingredients

  • 1/4 cup crushed pineapple, undrained
  • 1/2 cup cream of coconut
  • 2 tbsp rum or vodka, optional
  • 1 cup whipping cream
  • 1 1/2 cups pineapple juice

Directions

  1. Process pineapple, cream of coconut, rum and whipping cream in a blender until smooth.
  2. Add pineapple juice and blend until combined.
  3. Pour mixture into popsicle molds and freeze.
