POLENTA WITH BLUE CHEESE AND WALNUTS
This creamy polenta is full of tangy blue cheese and earthy walnuts. Serve it as a comforting side dish or a vegetarian entrée.

POLENTA WITH BLUE CHEESE AND WALNUTS
Ingredients
- 4 cups (1 L) milk
- 1/2 cup whipping cream
- 1/2 tsp salt
- 1 cup corn grits
- 1 1/4 cups crumbled blue cheese
- 1/4 cup coarsely chopped toasted walnuts
- 1 tbsp chopped fresh parsley
- 1/2 tsp freshly ground pepper
Directions
- Combine milk, cream and salt in a large saucepan and bring to a boil. Gradually whisk in corn grits.
- Reduce heat to low; cook, whisking frequently, until mixture is thick and creamy, about 20 minutes.
- Spoon into a greased shallow 2 quart (2 L) broiler-proof baking dish.
- Sprinkle cheese over polenta. Broil until cheese is lightly browned and heated through.
- Sprinkle with walnuts, parsley and pepper. Serve immediately.

Tip: Corn grits, also know as polenta, can be found in Italian grocery stores or the organic section of grocery stores. We used Bob's Red Mill Corn Grits in this recipe.
