QUICK BROCCOLI RICE BAKE

This broccoli casserole comes together quickly thanks to the help of frozen broccoli and canned cheddar cheese soup. It’s a great way to use up leftover turkey.

QUICK BROCCOLI RICE BAKE

Ingredients

  • 2 cups frozen chopped broccoli, thawed
  • 2 cups cooked long grain rice
  • 2 cups diced cooked turkey
  • 1 can (10 oz / 184 mL) cheddar cheese soup
  • 1/2 cup light sour cream
  • 1/4 tsp freshly ground pepper
  • Dash hot pepper sauce
  • 1/2 cup buttered crumbs

Directions

  1. Combine all ingredients except buttered crumbs. Spoon mixture into a deep 6 cup (1.5 L) greased casserole. Sprinkle with crumbs. Bake at 350ºF for 30 minutes or until heated through.
