Quick, Weeknight Meal
QUICK COUSCOUS PILAF
Ingredients
1 tbsp olive oil
1/2 cup finely chopped carrot
1/2 cup finely chopped celery
1/2 cup finely chopped onion
1 can (10 oz / 284 mL) chicken broth
1 cup couscous
1/4 tsp salt
1/4 tsp freshly ground pepper
1 tbsp chopped fresh parsley
Directions
Heat oil in a saucepan over medium heat.
Add carrot, celery and onion. Saute until vegetables are tender, about 5 minutes.
Stir in broth and bring to a boil. Stir in couscous, salt and pepper.
Cover; remove from heat and let stand for 5 minutes.
Fluff couscous mixture with a fork. Stir in parsley.
