QUINOA WITH ALMONDS AND DRIED BLUEBERRIES
This interesting side dish combines nutritious quinoa with dried blueberries, sliced almonds and fresh parsley. We cook the quinoa in orange juice for a boost of citrusy flavour.

QUINOA WITH ALMONDS AND DRIED BLUEBERRIES
Ingredients
- 2 cups water
- 3 tbsp fresh orange juice
- 1/2 tsp salt
- 1 cup quinoa, thoroughly rinsed and drained
- 1/2 cup slivered or sliced almonds, toasted
- 1/4 cup dried blueberries
- 2 tbsp chopped fresh parsley
- 1 tbsp grated orange peel
- 1 tbsp fresh lemon juice
Directions
- Combine water, orange juice and salt in a medium saucepan. Bring to a boil over medium heat. Stir in quinoa and return to a boil.
- Reduce heat and simmer, covered, until liquid is absorbed and quinoa is tender, about 15 - 20 minutes. Remove from heat.
- Fluff quinoa with a fork. Stir in almonds, blueberries, parsley, orange peel and lemon juice. Serve immediately.

Tip:
The outer hull of quinoa contains a bitter resin called saponin. Quinoa must be rinsed thoroughly before cooking in order to remove this bitter coating.
