RASPBERRY CLAFOUTI

Not to be confused with a cobbler or a crisp, a clafouti is a French fruit dessert that is more like an egg-heavy cake than a pie. This version is made with fresh raspberries.

Yield: Serves 8.

RASPBERRY CLAFOUTI

Ingredients

  • 4 large egg yolks
  • 2 large eggs
  • 1/4 cup granulated sugar
  • 3/4 cup homogenized milk
  • 3/4 cup whipping cream
  • 1 tbsp brandy
  • 1 1/2 tsp vanilla
  • 4 cups raspberries
  • Icing sugar*

Directions

  1. Preheat oven to 350ºF.
  2. To prepare custard mixture, whisk together yolks, eggs and sugar.
  3. Combine milk, cream, brandy and vanilla; add to egg mixture and whisk until blended.
  4. Sprinkle raspberries over bottom of a greased shallow 3 quart baking dish.
  5. Gently pour custard mixture over raspberries. Bake for 30 minutes or just until set.
  6. Remove from oven; cool on a rack for 15 minutes. Dust with icing sugar. Serve warm.
