RHUBARB COCKTAIL
Make a homemade rhubarb syrup for these impressive homemade non-alcoholic cocktails. Add gin or vodka for a boozy version.

RHUBARB COCKTAIL
Ingredients
- 6 cups sliced rhubarb
- 2 cups water
- 1 cup granulated sugar
- 1 tbsp fresh lemon juice
- Crushed ice
- 2 cups gingerale
Directions
- Combine rhubarb, water, sugar and lemon juice in a saucepan. Bring to a boil over medium heat.
- Reduce heat and simmer until rhubarb is tender, about 15 minutes.
- Strain mixture and reserve syrup; discard rhubarb. Chill syrup. Just before serving, pour syrup over ice and add gingerale.
