SAGEBRUSH STEAK WITH HORSERADISH SALSA

Prepared horseradish adds a nice zip to regular tomato salsa. This recipe pairs it with perfectly grilled sirloin steak, seasoned with a zesty rub.

Yield: Serves 6 - 8.

SAGEBRUSH STEAK WITH HORSERADISH SALSA

Ingredients

  • 1 cup medium salsa
  • 2 tsp prepared horseradish
  • 2 tbsp oil
  • 1 tbsp sage, crumbled
  • 1 1/2 tsp cumin
  • 1 tsp red pepper flakes
  • 3/4 tsp salt
  • 2 lb sirloin steak, 1 1/2 inches thick

Directions

  1. To prepare horseradish salsa, combine salsa and horseradish in a small bowl. Cover and refrigerate until serving or for up to 2 days.
  2. Combine oil, sage, cumin, red pepper flakes and salt in a heavy zip-lock plastic bag.
  3. Add steak and squeeze bag to coat steak with seasoning mixture; seal bag. Let stand for 30 minutes.
  4. Remove steak from bag. Grill steak over medium heat on natural gas barbecue to desired doneness.
  5. Serve with horseradish salsa.
