SASKATOON AND TOMATO COMPOTE
Ingredients
- 1 cup finely chopped onion
- 1 tbsp olive oil
- 2 tbsp sugar
- 1/2 tsp salt
- 1/4 tsp freshly ground pepper
- 1/4 cup port or dry sherry
- 2 tbsp balsamic vinegar
- 2 cups saskatoons
- 1 cup halved cherry tomatoes
Directions
- In a medium saucepan over low heat, sauté onion in oil, stirring frequently until golden, about 10 minutes.
- Stir in sugar, salt and pepper; cook 2 minutes.
- Add port and vinegar and bring to a boil.
- Stir in saskatoons and tomatoes and return to a boil. Reduce heat and simmer gently 5 minutes or until slightly thickened; cool.
- Cover and refrigerate for up to 2 days. Serve with chicken, lamb or pork.
