Simply jazz up your rice with coconut milk and give it a slightly sweet tropical flavour.

Simple Coconut Rice
Ingredients
- 2 cups long grain rice or jasmine rice
- 2 3/4 cups water
- 1 can (400 mL) coconut milk
- 1 tsp salt
Directions
- Combine rice, water, coconut milk and salt in a large saucepan. Bring to a boil over medium heat. Reduce heat and simmer, covered, for 20 minutes or until liquid is absorbed and rice is tender.
