SIMPLE TOMATO PASTA
Ingredients
- 2 cloves garlic, crushed
- 1 tsp water
- 2 tbsp olive oil
- 1 can (28 oz/796 mL) diced tomatoes
- 1/4 tsp freshly ground pepper
- 3 tbsp chopped fresh basil
- 1/4 tsp sugar
- 1/2 tsp salt
- 12 oz linguine or spaghetti
- Grated Parmesan cheese
Directions
- Combine garlic and water. Heat oil in a frypan.
- Add garlic mixture and sauté 2 minutes; do not brown. Stir in tomatoes and pepper; simmer until slightly thickened, about 10 - 15 minutes.
- Stir in basil, sugar and salt. Meanwhile, cook pasta according to package directions.
- Drain, reserving 1/4 cup cooking liquid. Stir cooking liquid into sauce.
- Toss pasta with sauce. Serve with Parmesan cheese.
