SLOW COOKER SWEET POTATO PURÉE

Cook this Thanksgiving-worthy spiced sweet potato and apple purée in your slow cooker to free up the oven for turkey roasting.

Yield: Serves 10.

SLOW COOKER SWEET POTATO PURÉE

Ingredients

  • 8 cups cubed peeled sweet potatoes (1 inch)
  • 3 cups cubed peeled Granny Smith apples
  • 1/2 cup water
  • 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp salt
  • 1/2 tsp freshly ground pepper
  • 1/4 tsp ground allspice
  • 1/2 cup whipping cream
  • 2 tbsp salted butter

Directions

  1. Combine sweet potatoes and apples in a 6 quart slow cooker.
  2. Whisk together water, cinnamon, ginger, salt, pepper and allspice. Pour water mixture over sweet potato mixture.
  3. Cover and cook on high heat setting until sweet potatoes and apples are tender, about 4 hours; drain.
  4. Purée sweet potato mixture in two batches in a food processor, adding 1/4 cup cream and 1 tbsp butter to each batch. Transfer to a serving dish.
