SOUTHWESTERN STYLE ZUCCHINI
Ingredients
- 1 cup chopped onion
- 2 tbsp canola oil
- 7 cups sliced zucchini
- 1 red bell pepper, diced
- 1 can (113 mL) chopped green chilies, drained
- 3 cups frozen corn, thawed
- 2 medium tomatoes, chopped
- 1 tsp salt
- 1/4 tsp freshly ground pepper
- 1/2 cup chopped fresh cilantro
- 1 cup shredded cheddar cheese
Directions
- Heat oil in a large frypan over medium heat. Add onion and sauté for 2 minutes. Add zucchini and sauté just until zucchini is barely tender, about 3 – 5 minutes. Stir in red pepper, green chilies, corn and tomatoes. Cook, covered, stirring occasionally, for 5 minutes. Add salt, pepper and cilantro; cook, covered for 2 minutes. Sprinkle with cheese and heat just until cheese is melted.

Tip:
If a milder flavour is desired, the amount of canned chilies may be reduced.
