SOUTHWESTERN STYLE ZUCCHINI

This sautéed zucchini gets some southwestern flair thanks to corn, green chilies, cilantro and cheddar cheese. Serve it as a side dish with a Tex-Mex meal.

Yield: Serves 10.

SOUTHWESTERN STYLE ZUCCHINI

Ingredients

  • 1 cup chopped onion
  • 2 tbsp canola oil
  • 7 cups sliced zucchini
  • 1 red bell pepper, diced
  • 1 can (113 mL) chopped green chilies, drained
  • 3 cups frozen corn, thawed
  • 2 medium tomatoes, chopped
  • 1 tsp salt
  • 1/4 tsp freshly ground pepper
  • 1/2 cup chopped fresh cilantro
  • 1 cup shredded cheddar cheese

Directions

  1. Heat oil in a large frypan over medium heat. Add onion and sauté for 2 minutes. Add zucchini and sauté just until zucchini is barely tender, about 3 – 5 minutes. Stir in red pepper, green chilies, corn and tomatoes. Cook, covered, stirring occasionally, for 5 minutes. Add salt, pepper and cilantro; cook, covered for 2 minutes. Sprinkle with cheese and heat just until cheese is melted.

Tip:

If a milder flavour is desired, the amount of canned chilies may be reduced.
