SOUTHWESTERN TURKEY BURGERS

Serve these spicy turkey burgers in tortillas to keep with the southwestern theme. Top them with our homemade Guacamole or a store-bought version if you’d prefer.

Yield: Serves 4.

SOUTHWESTERN TURKEY BURGERS

Ingredients

  • 1 lb (0.5 kg) ground turkey
  • 1/2 cup chopped green onions
  • 1/3 cup chopped fresh cilantro
  • 1 tbsp chopped canned chipotle peppers in adobo sauce
  • 2 tsp ground cumin
  • 1/4 tsp salt
  • Canola oil
  • 4 flour tortillas (6 inch)
  • 2 Roma tomatoes, diced
  • 1/4 cup Guacamole

Directions

  1. Combine turkey, green onion, cilantro, chipotle peppers, cumin and salt. Shape mixture into 4 oblong patties.
  2. Grill patties over medium heat on natural gas barbecue until completely cooked.
  3. Served wrapped in tortillas with tomatoes and guacamole.

Tip: Hot peppers cause severe skin and eye irritation. Wear rubber gloves when handling hot pepper and avoid touching any exposed skin. 
GUACAMOLE

Ingredients

  • 1 ripe avocado, halved, pitted, peeled and cubed
  • 3 tbsp mayonnaise
  • 1 1/2 tsp fresh lemon or lime juice
  • 3/4 tsp salt
  • 2 cloves garlic, roughly chopped
  • 1 Roma tomato, seeded and diced

Yield: Makes about 1 1/4 cups.

Directions

  1. Place avocado, mayonnaise, lemon juice, salt and garlic in a food processor; process until smooth. Transfer mixture to a bowl; stir in tomato. Cover and refrigerate for at least 30 minutes or up to 4 hours.
