Spiced Apple Rhubarb Spread
This sweet and tart spread can be served on top of muffins and scones. It is served on top of our Spiced Rhubarb Baked Goat Brie.
Yield: Makes about 1 1/2 cups.

Spiced Apple Rhubarb Spread
Ingredients
- 1 cinnamon stick, halved*
- 1/2 tsp whole cloves*
- 2 cups fresh or frozen chopped rhubarb
- 2 Golden Delicious apples, peeled, cored and finely chopped
- 1 cup granulated sugar
- 1 tsp grated orange peel
Directions
- Place cinnamon sticks and cloves on a piece of cheesecloth. Gather cheesecloth around spices to form a sachet. Tie with butcher’s twine and set aside.
- Bring rhubarb, apples and sugar to a boil in a medium pot over medium heat. Boil for 3 minutes. Add sachet and orange peel. Reduce heat to medium-low and simmer, stirring occasionally until fragrant and thickened, about 3 – 4 minutes. Remove from heat; discard sachet. Mash with a potato masher to break up pieces. May be refrigerated for up to 3 days.
