SPICED PANCAKE MIX
This homemade pancake mix is spiced with cinnamon, ginger and cloves. Divide it into portions to give out as holiday gifts.
Yield: Makes 8 cups.

SPICED PANCAKE MIX
Ingredients
- 6 cups all-purpose flour
- 3 cups skim milk powder
- 1/3 cup granulated sugar
- 1/4 cup baking powder
- 2 tbsp cinnamon
- 1 tbsp ground ginger
- 1 tbsp salt
- 1 tsp ground cloves
Directions
- Combine all ingredients.
- Store in an airtight container in a cool dry place for up to 1 month. May be frozen.
- To Make Spiced Pancakes: Place 2 cups mix in a bowl.
- Whisk together 1 1/4 cups water, 1 large egg and 1 tbsp cooled melted salted butter until blended. Add water mixture to mix and stir just until combined. Do not overmix.
- Using 1/4 cup batter for each pancake, spoon batter, spreading lightly, onto a lightly greased griddle or frypan over medium heat; cook pancakes until golden brown, about 1 - 2 minutes per side.
