SPICY BAKED FISH
Ingredients
- 1 cup mild or medium salsa
- 1 green onion, sliced
- 1/3 cup chopped green bell pepper
- 2 tbsp chopped fresh parsley
- 1 tbsp red wine vinegar
- Dash freshly ground pepper
- 1 lb (0.5 kg) cod fillets
Directions
- Preheat oven to 425°F.
- To prepare sauce, combine all ingredients except cod fillets in a medium bowl.
- Place fish in a shallow casserole dish; spoon sauce over top.
- Bake until fish flakes easily with a fork, about 20 minutes.
