STRAWBERRY TIRAMISU

This new take on traditional tiramisu is made with fresh strawberries. We use store-bought ladyfingers to help the dessert come together more quickly.

STRAWBERRY TIRAMISU

Ingredients

  • 12 oz (375 g) light cream cheese, softened
  • 3/4 cup (175 mL) icing sugar
  • 1/3 cup (75 mL) Marsala or rum, divided
  • 1/2 cup (125 mL) sour cream
  • 3/4 cup (175 mL) boiling water
  • 1 tbsp (15 mL) instant coffee granules
  • 24 - 28 ladyfingers
  • 2 cups (500 mL) sliced strawberries
  • 1 square semi-sweet chocolate, shaved
  • Whole strawberries, cut into fans

Directions

  1. Beat together cream cheese, icing sugar, 1/4 cup (50 mL) Marsala and sour cream.
  2. Combine water and coffee granules in a pie pan. Stir to dissolve.
  3. Add remaining Marsala.
  4. Quickly dip one ladyfinger into coffee mixture, turning to coat. Place, flat side up, in bottom of a 9 inch (23 cm) square glass baking dish. Repeat with enough ladyfingers to cover bottom of dish. Trim to fit if necessary.
  5. Spread with half of cheese mixture.
  6. Cover with sliced strawberries.
  7. Dip remaining ladyfingers in coffee mixture and arrange over top of strawberries. Spread with remaining cheese mixture. Sprinkle with shaved chocolate. Garnish with strawberry fans.
  8. Cover and refrigerate for 8 - 24 hours. Cut into squares and serve.
