SUMMER BERRY AND PEACH COMPOTE

This mélange of summer fruits consists of a white wine-spiked blueberry syrup poured over a mix of fresh strawberries, blackberries and peaches. Eat it on its own or serve it with yogurt or ice cream.

Yield: Serves 6.

SUMMER BERRY AND PEACH COMPOTE

Ingredients

  • 2 cups fresh or frozen blueberries
  • 1/2 cup packed golden brown sugar
  • 1/4 cup dry white wine
  • 1 tbsp fresh lemon juice
  • 1/2 tsp grated lemon peel
  • 1/2 tsp vanilla
  • 1 1/2 cups quartered fresh strawberries
  • 1 1/2 cups fresh blackberries or raspberries
  • 2 cups fresh sliced peeled peaches

Directions

  1. Combine blueberries, brown sugar, wine, lemon juice and lemon peel in a saucepan. Bring to a boil over medium heat.
  2. Reduce heat and simmer, stirring occasionally, until mixture is slightly thickened, about 15 - 20 minutes. Remove from heat and stir in vanilla. Cool to room temperature. Cover and refrigerate for at least 2 hours or up to 24 hours.
  3. Combine strawberries, blackberries and peaches. Spoon strawberry mixture into 6 serving dishes. Spoon blueberry mixture over top.
