SUNDAY MORNING BREAKFAST PIE

This pie is savoury, not sweet. Made with eggs, hash browns and plenty of cheese, it cooks up in the oven in a pie plate.

Yield: Serves 6.

SUNDAY MORNING BREAKFAST PIE

Ingredients

  • 6 eggs
  • 1/2 tsp freshly ground pepper
  • 1/4 tsp salt
  • 1/8 tsp hot pepper sauce
  • 1/3 cup milk
  • 2 cups frozen shredded hash brown potatoes, thawed
  • 2 cups shredded cheddar cheese
  • 1/2 cup crumbled cooked bacon
  • 1/4 cup thinly sliced green onion
  • 1 tbsp butter, melted
  • Paprika

Directions

  1. Whisk together eggs, pepper, salt and hot pepper sauce in a bowl. Whisk in milk until blended.
  2. Stir in potatoes, cheese, bacon and green onion.
  3. Pour into a greased 9 1/2 inch deep-dish pie plate. Drizzle with melted butter. Sprinkle with paprika. Bake at 325ºF for 50 minutes or until a knife inserted in centre comes out clean.
