Sweet Pastry
Ingredients
- 1/4 cup whipping cream
- 1 large egg yolk
- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup salted butter, chilled and cubed
Directions
- Whisk together cream and egg yolk until pale yellow in colour; set aside.
- Place flour and sugar in a food processor; process to combine. Add butter and process, using an on/off motion, until mixture resembles coarse meal. Add cream mixture and process, using an on/off motion, just until dough starts to come together.
- Gather dough into a ball. Flatten dough into a disc shape. Wrap disc with plastic wrap and refrigerate for 1 hour before rolling out.

Tip: Using chilled butter is essential to achieving perfect, flakey dough. The dispersed pieces of chilled butter melt while baking creating tender, flakey layers in your crust.
