SWEET TARRAGON CARROTS

The intense, slight licorice-y taste of tarragon goes wonderfully with these honey-sweetened carrots. Serve them with roast meat, fish or chicken.

SWEET TARRAGON CARROTS

Ingredients

  • 4 cups sliced carrots (1/4 inch)
  • 1 tbsp salted butter
  • 2 tbsp liquid honey
  • 2 tbsp white balsamic vinegar
  • 1/2 tsp tarragon, crumbled
  • 1/4 tsp salt
  • 1/8 tsp freshly ground pepper

Directions

  1. Cook carrots in boiling salted water until tender crisp, about 5 minutes; drain. Cool immediately in ice water; drain.
  2. Melt butter in a large frypan over medium heat. Stir in honey, vinegar, tarragon, salt and pepper. Add carrots and cook, stirring, until liquid is reduced and carrots are tender, about 6 - 8 minutes.
