THAI CUCUMBER SALAD
Ingredients
- 1/4 cup rice vinegar
- 2 tsp granulated sugar
- 1/2 tsp grated lime peel
- 1/2 tsp grated fresh ginger
- 1/2 tsp salt
- 1/4 tsp red pepper flakes
- 3 cups seeded English cucumber slices, 1/4 inch thick
- 2 tbsp slivered fresh basil
Directions
- To prepare dressing, whisk together vinegar, sugar, lime peel, ginger, salt and red pepper flakes until combined.
- Combine cucumber and basil in a bowl. Add dressing and toss to coat. Serve immediately.
