Tropical Salad

We brought tropical flavours to this popular side salad and we also made it easy by using packaged coleslaw, canned pineapple, and mandarin oranges. The only chopping is the addition of fresh mango – yum!

Tropical Salad

Ingredients

  • 1/3 cup mayonnaise
  • 1/3 cup light sour cream
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp fresh lime juice
  • 2 tsp grated lime peel
  • 2 tsp granulated sugar
  • 1 tsp curry powder
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper
  • 8 cups coleslaw mix
  • 1 can (8 oz/ 227 mL) pineapple tidbits, drained
  • 1 can (10 oz/ 284 mL) mandarin oranges, drained
  • 2 cups cubed peeled mango

Directions

  1. To prepare dressing, combine first 9 ingredients (mayonnaise through pepper) until blended.
  2. Combine coleslaw mix, pineapple, oranges and mango in a bowl.
  3. Add dressing and toss to combine. Serve immediately.
