TURKEY MEAT LOAF
Lighten up your traditional meatloaf with ground turkey in place of the traditional ground beef. It goes beautifully with our Apple Herb Gravy.

TURKEY MEAT LOAF
Ingredients
- 3 tbsp salted butter
- 1 1/2 cups finely chopped celery
- 1 1/2 cups finely chopped onions
- 1 cup finely chopped mushrooms
- 2 cloves garlic, finely chopped
- 2 tsp poultry seasoning
- 1 tsp salt
- 1/2 tsp freshly ground pepper
- 2 lb (1 kg) ground turkey
- 1 1/2 cups soft fresh bread crumbs
- 1/3 cup chopped fresh parsley
- 2 large eggs, lightly beaten
- Apple Herb Gravy
Yield: Serves 12.
Directions
- Preheat oven to 350°F.
- Melt butter in a large frypan over medium heat. Add celery, onions, mushrooms, garlic, poultry seasoning, salt and pepper; sauté until vegetables are softened and liquid is evaporated, about 8 - 10 minutes. Remove from heat and cool to room temperature.
- Combine vegetable mixture, turkey, bread crumbs, parsley and beaten eggs until blended. Shape mixture into a 4x12 inch oval loaf in a parchment paper-lined rimmed baking sheet.
- Bake, uncovered, until a meat thermometer inserted in centre registers 175°F, about 1 hour. Let stand for 10 minutes before slicing. Serve with Apple Herb Gravy.

APPLE HERB GRAVY
Ingredients
- 1 1/2 cups chicken broth
- 1 cup apple juice
- 1/3 cup salted butter
- 1/3 cup all-purpose flour
- 2 tbsp apple cider vinegar
- 1 tbsp finely chopped fresh parsley
- 1 tbsp finely chopped fresh sage
- 1 tbsp finely chopped fresh thyme
- 1 tsp finely chopped fresh rosemary
Yield: Makes about 2 cups.
Directions
- Combine broth and apple juice in a small non-reactive saucepan. Bring to a simmer; keep warm.
- Melt butter in a medium non-reactive saucepan over medium heat until bubbly. Add flour and cook, stirring, until flour mixture is browned, about 5 minutes. Gradually whisk in heated broth mixture, whisking until mixture is smooth.
- Reduce heat to low and cook, whisking frequently, until thickened, about 15 minutes. Remove from heat and stir in vinegar, parsley, sage, thyme and rosemary. Serve immediately.
