Whole Wheat Crackers

Making homemade crackers is super easy. Our whole wheat cracker dough comes together quickly using just 4 simple ingredients and then you have a choice of 3 different seasonings to top them off.

Yield: Makes about 64.

Whole Wheat Crackers

Ingredients

  • 1 1/4 cups whole wheat flour, divided
  • 1/2 cup ground flaxseed
  • 1/4 tsp salt
  • 1/2 cup water

Directions

  1. Preheat oven to 350°F.
  2. Combine 1 cup flour, flaxseed and salt in a small bowl. Add water and stir until dough comes together and forms a ball. Knead dough gently 3 – 4 times. Do not overwork dough. If dough is too sticky, gradually knead in additional ¼ cup of flour, 1 tbsp at a time.
  3. On a generously floured surface, roll out dough into a 16x16 inch square, rotating occasionally to prevent sticking.

Cumin Caraway and Sea Salt Spice

Ingredients

  • 1 tsp cumin seeds
  • 1 tsp caraway seeds
  • 2 tbsp extra-virgin olive oil
  • 1 tsp fleur de sel (finishing salt) or coarse sea salt

Directions

  1. Grind cumin seeds and caraway seeds in a coffee grinder until coarsely ground. Alternatively, a mortar and pestle may be used.
  2. Combine spice mixture and oil in a small bowl. Brush dough with mixture and sprinkle with fleur de sel.
  3. Cut dough into 2x2 inch squares. Transfer crackers to parchment paper-lined baking sheets.
  4. Bake until edges begin to curl and crackers are crispy, about 15 – 17 minutes. Remove from pan and cool on a rack. Store in an airtight container in a cool dry place for up to 1 week. May be frozen.

Cacio e Pepe Spice

Ingredients

  • 2 tbsp extra-virgin olive oil
  • 1 tsp freshly ground pepper
  • 1 cup freshly grated parmesan cheese

Directions

  1. Brush top of dough lightly with oil and sprinkle with pepper.
  2. Cut dough into 2x2 inch squares. Transfer crackers to parchment paper-lined baking sheets.
  3. Bake for 7 minutes. Remove pan from oven. Carefully sprinkle a thin layer of cheese over crackers. Continue baking until cheese is lightly browned and crackers are crispy, about 6 – 7 minutes. Remove from pan and cool on a rack. Store in an airtight container in a cool dry place for up to 1 week. May be frozen.

Everything-Bagel Spice

Ingredients

  • 2 tsp dehydrated minced onion
  • 1 tsp black sesame seeds
  • 1 tsp fleur de sel (finishing salt) or coarse sea salt
  • 1 tsp poppy seeds
  • 1 tsp sesame seeds
  • 1/2 tsp freshly ground pepper
  • 2 tbsp extra-virgin olive oil

Directions

  1. Combine onion, black sesame seeds, fleur de sel, poppy seeds, sesame seeds and pepper in a small bowl.
  2. Brush top of dough lightly with oil and sprinkle with spice mixture. Pat gently or roll gently with rolling pin to adhere.
  3. Cut dough into 2x2 inch squares. Transfer crackers to parchment paper-lined baking sheets.
  4. Bake until edges begin to curl and crackers are crispy, about 15 – 17 minutes. Remove from pan and cool on a rack. Store in an airtight container in a cool dry place for up to 1 week. May be frozen.
