YAM MASH WITH CHEDDAR

Try mashed yams in place of your standard mashed potatoes. This bright orange side dish is made all the tastier with green onions and cheddar cheese.

Yield: Serves 6.

YAM MASH WITH CHEDDAR

Ingredients

  • 6 cups cubed peeled yams
  • 1 tbsp salted butter
  • 1/2 tsp salt
  • 3/4 cup shredded cheddar cheese
  • 1/3 cup finely chopped green onions

Directions

  1. Cook yams in boiling salted water until tender; drain. Add butter and salt.
  2. Mash with a potato masher until smooth. Stir in cheese and green onions. Cover and let stand until cheese is melted, about 2 minutes.
