You can bake full ears of corn in the oven if you wrap them in a foil packet. We flavour these tasty cobs with ground coriander, cayenne pepper and lime juice.

ZESTY BAKED CORN IN A PACKET
Ingredients
1/4 cup salted butter, softened
1 tsp ground coriander
1/8 tsp cayenne pepper
6 cobs of corn, husked
2 tbsp fresh lime juice
Directions
Preheat oven to 450°F.
Combine butter, coriander and cayenne pepper until blended.
Place cobs of corn in a single layer in centre of a large piece of heavy-duty foil.
Spread butter mixture over tops of cobs of corn. Drizzle with lime juice.
Bring edges of foil together to form a packet; close all edges with tight double folds.
Transfer packet to a rimmed baking sheet.
Bake for 30 minutes or until corn is tender.
Let stand for 5 minutes in pan before opening packet. Serve immediately.
