ZESTY BAKED CORN IN A PACKET

You can bake full ears of corn in the oven if you wrap them in a foil packet. We flavour these tasty cobs with ground coriander, cayenne pepper and lime juice.

Yield: Serves 6.

ZESTY BAKED CORN IN A PACKET

Ingredients

  • 1/4 cup salted butter, softened
  • 1 tsp ground coriander
  • 1/8 tsp cayenne pepper
  • 6 cobs of corn, husked
  • 2 tbsp fresh lime juice

Directions

  1. Preheat oven to 450°F.
  2. Combine butter, coriander and cayenne pepper until blended.
  3. Place cobs of corn in a single layer in centre of a large piece of heavy-duty foil.
  4. Spread butter mixture over tops of cobs of corn. Drizzle with lime juice.
  5. Bring edges of foil together to form a packet; close all edges with tight double folds.
  6. Transfer packet to a rimmed baking sheet.
  7. Bake for 30 minutes or until corn is tender.
  8. Let stand for 5 minutes in pan before opening packet. Serve immediately.
