ZESTY BARLEY PILAF
Ingredients
- 2 cups chopped onions
- 1 cup chopped fresh mushrooms
- 2 tbsp salted butter
- 1 cup pearl barley, rinsed and drained
- 2 cups canned chicken broth
- 1 1/2 tsp hot pepper sauce
- 1/4 tsp salt
- 1 1/2 cups cubed zucchini
- 1 cup diced red bell pepper
Directions
- In a medium saucepan, sauté onions and mushrooms in butter until tender, about 5 minutes.
- Stir in barley and cook for 1 minute. Add broth, hot pepper sauce and salt; bring to a boil.
- Reduce heat; cover and simmer 20 minutes.
- Stir in zucchini and red pepper. Cover and simmer 15 - 20 minutes or until vegetables and barley are tender.
