One Pot
ZESTY BARLEY PILAF
Ingredients
2 cups chopped onions
1 cup chopped fresh mushrooms
2 tbsp salted butter
1 cup pearl barley, rinsed and drained
2 cups canned chicken broth
1 1/2 tsp hot pepper sauce
1/4 tsp salt
1 1/2 cups cubed zucchini
1 cup diced red bell pepper
Directions
In a medium saucepan, sauté onions and mushrooms in butter until tender, about 5 minutes.
Stir in barley and cook for 1 minute. Add broth, hot pepper sauce and salt; bring to a boil.
Reduce heat; cover and simmer 20 minutes.
Stir in zucchini and red pepper. Cover and simmer 15 - 20 minutes or until vegetables and barley are tender.
